Peanut butter & banana popsicles

We've been experiencing an unusually warm summer for the last few weeks. At the start of the heat wave, I tried my hands at making popsicles. I even managed to find moulds at TK Maxx to pour the batter in (even if I think they are meant for making ice pops for kids).


Ingredients

3 large ripe bananas
½ C organic smooth peanut butter (salted; if unsalted, then ¼ tsp sea salt is needed)
½ C almond milk
1 T organic honey
½ tsp vanilla extract

Moulds (I used a silicon heart ice tray, silicon cupcake moulds, and a set of popsicle moulds)


Method

  1. Combine all the ingredients in a blender and blend until smooth.
  2. Adjust sweetness if needed (bear in mind the mixture will taste less sweet when frozen).
  3. Pour the mixture into moulds (the quantity will vary depending on the size of your moulds).
  4. Place a stick in the moulds if making into popsicles.
  5. Freeze the mixture till solid (it took around 4 hours as I used smaller moulds).
  6. To remove the frozen popsicles, warm the outside of the moulds for a couple of minutes to loosen. They should pop right out after that.
  7. Store these frozen treats in a sealed container in the freezer.

These ice-cream like popsicles were creamy and decadent, and healthy too! Needless to say, they went down a treat.
