Korean BBQ beef and vegetable stir-fry


Ingredients for the marinade/sauce

fermented broad bean paste
organic honey
tomato paste
garlic, minced
chilli pepper powder
chilli flakes
water

Other ingredients

coconut oil
organic steak mince
baby corn, sectioned
French beans, trimmed
white sesame seed, for garnish
wholegrain basmati

Method


  1. In a medium bowl, mix all the ingredients for the marinade together.
  2. Marinate the mince in the sauce and a bit of oil, covered, for at least 1.5 hours.
  3. Heat a heavy-bottom pan (or wok) on a high heat and brown the marinated mince. Remove and set aside.
  4. Heat a bit of oil and stir fry the baby corn for 3-4 minutes until slightly soft.* Remove and set aside.
  5. Heat a bit of oil and stir fry the French beans for 5 minutes until slightly soft.* Remove and set aside.
  6. Return the mince, baby corn, and French beans back in the pan and mix together. Pour the marinade over the mix and stir fry for 2 minutes until fully combined.
  7. Serve immediately with rice with sesame seeds sprinkled on top if desired. 

* The vegetables may also be blanched separately then mixed with the mince and stir fried before serving.
