1 sweet yellow onion, cut into small chunks

2 tsp demerara sugar
1 tsp fish sauce, optional
⅛ tsp pink salt
bunch of fresh coriander, chopped
1 tbsp extra virgin olive oil
a dash of Tabasco sauce, optional
