Sea bass with chunky mango salsa

Pan fried sea bass fillet, served with chunky mango salsa and blanched tenderstem broccoli

Ingredients

Sea bass fillet
Parsley, chopped

Tenderstem broccoli

1 medium-large mango, cut into small chunks
1 sweet yellow onion, cut into small chunks
4 vine-ripen tomatoes, cut into small chunks
2 tsp demerara sugar
1 tsp fish sauce, optional
⅛ tsp pink salt
bunch of fresh coriander, chopped
1 tbsp extra virgin olive oil
a dash of Tabasco sauce, optional
