All-purpose baking mix (wheat free, grain free )

A useful baking mix recipe from Dr William Davis's 'Wheat Belly 30-Minute (Or Less!) Cookbook'. This mix is meant for creating a variety of different bread and baked goods: loaf breads, flatbreads, rolls, scones, muffins, and cookies. Keeping a supply of this mix on hand will help save time.
All-purpose baking mix

Ingredients

yields 5 cups

4 C almond meal/flour
1 C ground golden linseeds
¼ C coconut flour
2 tsp baking soda
1 tsp ground psyllium seed, optional

Method

  1. In a large bowl, whisk together the almond meal/ flour, linseeds, coconut flour, baking soda, and psyllium seed (if using).
  2. Store in an airtight container, preferably in the refrigerator.
