Lemon chilli chicken

Lemon chilli chicken with lemon & thyme gravy, served with roast baby potatoes and steamed broccoli

Ingredients

for 2

Roast chicken
2 large chicken breasts, on the bone
1 lemon, juiced
2 bird's eye chillies, chopped, or dried chilli flakes
2 tsp thyme
pink salt, to taste

Roast potatoes
4-6 baby potatoes, halved, soaked, drained & dried
duck fat
pink salt, to taste

Gravy
1 lemon, juiced
⅔ C chicken stock
