Pan-fried seabass with spicy mango salsa and couscous


Spicy mango salsa

Ingredients

2 mangos, cubed
4 vine-ripen tomatoes, chopped
1 red onion, chopped
1 avocado, chopped
2 jalapeño peppers, sliced (include ribs and seeds for a hotter taste)
juice of 1 lemon
fresh coriander, chopped, to taste
sea salt, to taste
ground pepper, to taste


Couscous with spinach & cashew

Ingredients

2 C vegetable stock
zest of 1 lemon
2 C spinach, chopped
½ C raw cashew, chopped
sea salt, to taste
ground pepper, to taste
