Baked chicken leg & thigh

Baked chicken leg & thigh with cayenne pepper & marjoram, served with hasselback potatoes, and fried chilli green beans (乾四季豆)

Ingredients


chicken leg & thigh
cayenne pepper, to taste
marjoram, to taste

white potatoes, sliced thinly halfway through
duck fat
chicken fat, from leg & thigh
pinch of pink salt

green beans
chilli flakes
chicken fat
