Pan fried cod with salsa cruda

Pan fried cod with salsa cruda, served with sautéed broccolini & green beans 

Ingredients

2 cod fillets
knob of grass-fed butter
herb pink salt
ground black pepper

1 red onion
2 tomatoes (on the vine)
jalapeño peppers, sliced (& drained)
bunch of fresh coriander leaves
1-2 tbsp extra virgin olive oil
salt & pepper to taste
