Là ròu chicken rice 臘肉雞腿飯

Following the success of the first la rou fan I'd ever made, I recreated the smokey chicken rice dish, swapping out the chorizo with the la rou.



Ingredients

2 chicken thighs on the bone, skin scored
75g cured pork
1 small courgette, sliced and halved
1 small aubergine, sliced and halved
1 C wholegrain basmati
2 C filtered water
garlic powder
paprika
