Duck with cranberry sauce and potato hash

Duck with cranberry, orange & coconut sauce
served with sweet potato, baby potato & Brussel sprout hash

Duck 

breast, skin scored, rendered
fresh ground pepper

2 duck breasts = 250ml duck fat!

Cranberry, orange & coconut sauce 


Potato & sprout hash

sweet potatoes, cubed
baby potatoes, cubed
Brussels sprouts, sliced
garlic cloves
duck fat
cayenne pepper
