Sticky honey lemon chicken with broccoli |
Ingredients
for 2
2 large chicken breasts on the bone1 tsp coconut oil, to coat the pan
1 unwaxed lemon, halved & juiced
1 tbsp organic honey
2 tsp dried thyme
1 tsp dried rosemary
salt & pepper, to taste
small head of broccoli, trimmed & cut into florets
Method
- Preheat the oven to 180°C.
- Heat a little bit of coconut oil in a large pan (I'm using a heavy bottom pan suitable for the hob and oven).
- Sear the chicken breasts, skin-side down in the pan.
- In the meantime, in a small bowl, mix together the lemon juice and honey.
- When the chicken is seared, flip over. Pour the lemon and honey mixture over the chicken breasts.
- Place the lemon halves in the pan for extra flavour.
- Season the chicken with thyme, rosemary, salt, and pepper.
- Place the pan in the oven and cook for 30-40 minutes or until the chicken is cooked.
- In the meantime, steam the broccoli.
- Remove the chicken from the oven and discard the lemon halves.
- Pass the juices from the pan through a sieve and into a saucepan. Bring the juice to the boil, uncovered, for about 3 minutes, till the juices have thickened slightly and become sticky. Season if needed.
- Pour the sticky sauce over the chicken. Serve with steamed broccoli.
